Over the years, we have had many cases of people who ate out in restaurants with a child who had a food allergy. The manager and staff ensured that everything was thoroughly cleaned and safe for consumption. However, their child ended up having an allergic reaction to the food.
Most people don't realize the vast difference between cleaning versus sterilizing and that sterilizing is crucial for anyone with severe allergies. A common allergy myth is that people think that soap and water are enough to prevent cross-contamination. While soap, water, and paper towels are enough to keep your hands clean from allergens, it is not enough for counters, utensils, pots, and pans.
Cleaning is when you remove all visible dirt or filth from a surface. According to many studies, cleaning only kills 86% of allergens on surfaces. While you might think that is enough, many people can still suffer an anaphylaxis allergic reaction from that small percentage of allergens.
Sterilizing is eliminating traces of invisible proteins and oils that contain allergens from surfaces. Many allergens are naked to the eye and are on a micro-level. Therefore, sanitizing is essential to prevent someone from experiencing an allergic reaction. Most people don't know how to sanitize things properly, and this can be very dangerous.
People familiar with allergies or have a child with food allergies don't allow the allergen in the kitchen. In this case, when you know that the allergen has never been in the kitchen, then cleaning is perfectly safe. However, most restaurants and hotels have many allergens in the kitchen, and they don't know how to make the environment safe for someone with allergies properly.

During our recent visit to Israel, we really struggled to find food for our son who has anaphylactic level allergies to egg and sesame. We approached both restaurants and hotels and were told they were unable or unwilling to take responsibility for preparing his food.
